Eric Carmen "All By Myself" (interlude based on Rachmaninov's Piano Concerto # 2) & "Never Gonna Fall In Love Again" (melody based on Rachmaninov's "Second Symphony") (both from 1976).

Nobody's mentioned Ravel's Bolero? Accessible to everyone, yet still has its complexity; it is my absolute favorite piece of classical music.
