That a modest way of life today is considerably better than very wealthy people lived not all that long ago. Even people that are considered to live in poverty by today's standards are living a better lifestyle than the King's and Queen's of old did. The industrial revolution and innovation spurred on by capitalism made it all, even labour unions, possible.

And living in "poverty" in the USA or Canada is better than "middle class" in most of the rest of the world.

But getting back to the OP. There really shouldn't be a problem starting a union today. There are PLENTY of folks who pay lots of other folks for services they really should be able to perform by themselves. And LOTS of companies pay third parties to handle all kinds of functions they could really handle internally (and probably cheaper and better).

So why would it be so hard? If companies abdicate the functions of "taking care" of employees, and there are enough employees who'd want to hire a third party to manage the negotiations, when why would it be such a big deal to get one started?

I'm not trying to denigrate a lifestyle of modest comfort. I'm very content living the way we live. I wouldn't trade it for the life of a modern-day King.

New study out now says those more exposed to the common cold have Covid protection via T-cells.

This makes sense. Mature Chicken's don't generally catch the Marek's virus because their immune system is more developed to natural viruses in the environment.
