What makes up the ice part?

I didn't know the answer, but your question made me curious enough to try to find out.

Ice beer is a beer style, in which beer has undergone some degree of fractional freezing during production. These brands generally have higher alcohol content than typical beer and generally have a low price relative to their alcohol content.[1]

The process of "icing" beer involves lowering the temperature of a batch of beer until ice crystals form. Since ethanol has a much lower freezing point (-114 °C; -173.2 °F) than water (0 °C; 32 °F), when the ice is removed, the alcohol concentration of the beer increases. The process is known as fractional freezing or freeze distillation.[2]

You did. It just rang a bell from my last trip to Toronto in 2019. I tried it bottled at a restaurant (and enjoyed it).

There was an 'ice beer' craze back in the mid-90's... seemed like all the major breweries (Miller, Budweiser, and many others) were falling all over themselves to produce an ice beer variant. Some of the larger regionals picked up on it & did the same...

Back in those days in Pittsburgh, they had a local beer called Iron City, which everyone just referred to as 'IC'. They also had a light version, IC Light. When they came out with their 'ice' beer, you guessed it - IC Ice (followed by IC Ice Light).

If you want to trace 'ice' beer back to its origins, though, Google 'eisbock'. It was an accident, and it's nothing like the ice beers referenced here. Dark and malty...

Eisbocks are harder to find, will knock you on your can if you're not careful, and will likely drain your wallet. You don't need a 6-pack though - usually one in an evening is enough.

Should you decide to try one some time, I'd recommend Schnieder (Weiss) Aventinus Weizen-Eisbock, or Kulmbacker's version, in that order.
